内容記述 | The regular annual events have been preserved closely connected with the life of the people. A specific event has its specific food, and they are also closely tied up. The rapid social evolution, however, strongly affected the kind and quality of food in general. The food for the social event being no exception to this change, it may be interesting to make it clear. The following researches concern a New Year's Day menu of the ordinary families in and around Hiroshima, which is said to have little changed recently. (1) As a staple food, excepting plain boiled rice, zoni (rice cakes boiled with vegetables) is most widely eaten. Zoni is eaten by all members of the family; 99% of the breakfast of the day consists of zoni. There is no doubt that the New Year's Day is celebrated by eating zoni. (2) The subsidiary dishes mostly eaten consist of native articles of food such as boiled black soy beans, vegetables cooked hard with soy, vinegared dishes, herring-roes, kamaboko (boiled fish paste), sliced raw fish, ham, salad, roast meat, and kinton (mashed sweet potato with sweetened chestnuts). In addition to these, tazukuri (dried sardines), fried eggs, chawanmushi (a thick custardy soup), fried fish and consomme soup are eaten for three days since the New Year's Day, (3) It is customary to cook enough food on the New Year's Eve and stay away from the kitchen on the New Year's Day. Representative dishes which are prepared then are: boiled black soy beans 94.7%5 dried sardine called tazukuri 75%, nishime (vegetables boiled hard with soy) 72.4%, vinegared dishes 45.5%, and sushi (boiled rice and other food flavored with vinegar) 29.7%. Other dishes are cooked on the New Year's Day. Recently New Year's Day dishes sold at department stores seem very popular. But, in fact, most of the dishes are prepared at home. (4) Toso (sweet sake spiced with some medical herbs), fukucha (a kind of tea with knotted tangle - kombu- and pickled pumps), and umecha (tea with pickled plums) are now very rarely used. The habit of eating these food is fast dying. | |||||||||
